Crunchy, flavorful, and totally vegan! These Crispy Chickpea Taquitos are a must-try for your next fiesta - perfect for satisfying that crispy craving!
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 small onion, finely chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 10 small corn tortillas
- 1 can white beans
- 1/2 cup nutritional yeast
- 1/4 cup canned diced green chilies
- 1/2 teaspoon cayenne pepper
- Juice of 1 lime
- Salt to taste
- Cooking spray
Instructions:
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a bowl, mash the white beans with a fork. Add in the nutritional yeast, diced green chilies, cayenne pepper, lime juice, and salt. Mix well to create the spicy queso.
3. In a separate bowl, combine the chickpeas, chopped onion, cumin, paprika, garlic powder, salt, and pepper.
4. Lay out the corn tortillas and divide the chickpea mixture evenly among them, spooning it onto one end of each tortilla. Roll tightly to form taquitos.
5. Place the taquitos seam side down on the prepared baking sheet. Spray them lightly with cooking spray.
6. Bake in the preheated oven for about 15-20 minutes or until the taquitos are crispy and lightly browned.
